Pink in colour, was unveiled by Callebaut as a new fourth chocolate in 2017 and is made from ruby cocoa beans. Calllebaut 823 is the most popular milk chocolate recipe and is used worldwide for many applications as it is suitable for moulding and enrobing, piping and for glazes. Callebaut 823 is also perfect for giving flavour to mousses, ganache and crèmes. It has a rich cocoa taste with a milky flavour and hints of caramel. Callebaut 811 contains a minimum 54.5% cocoa solids, 36.6% cocoa butter and is dairy free and therefore suitable for vegans.Callebaut Ruby Chocolate, which is pink in colour and sometimes referred to as pink chocolate, was unveiled by Callebaut as a new fourth chocolate in 2017 and is made from ruby cocoa beans. Callebaut have developed a range of white chocolates to suit most tastes the most popular recipe in the UK being W2 which has a balanced, creamy and caramelly flavour with 28% cocoa butter and medium fluidity. When tempered correctly it produces a glossy finish with plenty of ‘snap’.

The term Chocolate Callets was originated by Callebaut to describe their easimelt small chocolate pieces, which are mostly used by Artisan Chocolatiers in the UK. Chocolate callets are formulated for melting rather than baking.Cocoa solids in Callebaut milk chocolate can vary from around 30% to 40.7% in the latest addition to the Callebaut milk chocolate range – POWER 41 – which is which is much higher than the others in the range and also lower in sugar.
