Strawberry milk tea (also known as strawberry bubble tea or strawberry boba) is a type of milk tea made with strawberries. Most bubble tea shops prepare this type of boba using powders or commercial strawberry milk, which can have an artificial flavour. Also, it rarely contains actual tea. While they are slightly more expensive on a per glass basis than buying pre-made flavoured milk I found they lasted longer and can be used for more than one glass of milk. The flavour was definitely superior to the powdered milk flavourings I have tried before.

Can adjust sweetness: In this recipe, sweetness is given by the strawberry syrup. Adjust the level of sweetness by adding less syrup. The strawberry flavour can be boosted by adding 1-2 teaspoons of freeze-dried strawberry powder. You can make your strawberry milk with whatever milk you have in the fridge, but whole milk makes the richest, tastiest drink. If you have heavy cream or half and half on hand, you can also add a splash of that to the mix for a richer end product (highly recommended). Milkshakes have always seemed to me the height of decadence: a dessert cunningly masquerading as a refreshing drink, and that’s even without the ice-cream that most of the world seems to regard as an essential ingredient. Strawberries, with their famous affinity with all things creamy, are the perfect summery subject – sweet enough to please, sharp enough not to be cloying, and perhaps the ultimate treat when it’s too hot to cook. Swap out the sugar for some honey or artificial sweetener such as Stevia, Splenda, or monk fruit sweetener. The subtle, delicate sweet flavors make this strawberry milk delightful. Enjoy it cold as a refreshing summer drink, or warm for a cozy winter beverage.

This strawberry milk ends up a lovely pale pink, but if making for kids (or childlike adults), feel free to add a couple drops of red food coloring for a more vibrant pink color. I used two drops for the milk you see in the photos. Optional: cream – 2-3 tablespoons of cream on top will make the milk tea extra creamy and decadent.

My second straw was more cleverly managed and I got a nice balance of flavour and no milk left over afterward, although I did discover that rate of suction really does make a difference to flavour intensity. Soak boba in syrup: Most tapioca pearls don’t have much sweetness, so tossing them through syrup is essential to make them sweet. Make sure the syrup is hot when doing so.
